Chocolate-Toffee Cookies

A friend of mine gave me this recipe:



Chocolate-Toffee Cookies


½ cup all-purpose flour

1 tsp. baking powder

¼ tsp. salt

1 pound bittersweet or semi-sweet chocolate, chopped

¼ cup (1/2 stick) unsalted butter

1 3/4cups packed dark brown sugar

4 large eggs

2 Tbsp. coffee flavoring

6 (1.4ounce) chocolate covered English toffee bars, coarselychopped



Combine flour, baking powder and salt in a small bowl; whiskto blend. Stir chocolate and butter in top of double boiler set over simmeringwater until melted and smooth. Remove from over water. Cool mixture untillukewarm.

Using electric mixer, beat sugar and eggs in a bowl untilthick, about 5 minutes. Beat in Chocolate mixture and coffee flavoring. Stir inthe flour mixture, then the toffee. Chill batter until firm about 45 minutes.

Preheat oven to 350degrees. Line 2 large baking sheets withparchment paper. Drop batter by scant ¼ cupfuls onto sheets, spacing about 2 ½inches apart. Bake just until tops are dry and cracked but cookies still softto touch, about 15 minutes. Cool on sheets. If cookies are smaller bake 9-11minutes.
