Apple Cake

APPLE CAKE
(Yields about 12 pieces)



INGREDIENTS:

2 cups Gold Medal flour, sifted

1/2 pound sweet butter

1/2 cup Splenda

2 teaspoon baking powder

3 tablespoons sour cream

1 egg, for brushing



For the filling:

3 pounds McIntosh apples, peeled and sliced

1 cup Splenda

Rind of 1/2 a lemon

1/4 teaspoon cinnamon



DIRECTIONS:

In a food processor, mix together flour and butter.

Add Splenda, baking powder, and sour cream until it all comes together.

Take a sheet of Reynolds no stick foil or wax paper and put butter on it. Let dough rest for one hour in refrigerator.



Butter and flour a 9 by 14 inch baking pan.



Remove dough from refrigerator and let rest for 30 minutes at room temperature.

Prepare filling by mixing together the apples, Splenda, lemon rind, and cinnamon.

Press half of the dough in the pan (or roll the dough out). Fill with the filling.

Roll out the other half of the dough. Then, place on top of the apple filling.

Seal the ends with a fork, and use the fork to prick holes on top.

Brush top with egg wash.

Bake at 375 degrees for 45 minutes.

Remove from oven and slice.
